With over 20 years of international culinary experience, Chef Carmine brings a considered blend of classic foundations and contemporary expression to Jumeirah Olhahali Island. His journey began in a family-owned kitchen in Italy, shaping a deep respect for craft and tradition, before evolving across award-winning kitchens restaurants and luxury hotels across Asia, the Caribbean, and South America.
During his career in Asia, kitchens under his leadership earned international recognition, including being featured in the Michelin Guide. Known for his intuitive approach to flavour and his commitment to fresh, locally sourced ingredients, his menus are grounded, expressive, and quietly refined.
At Jumeirah Olhahali Island, Chef Carmine will lead the resort’s culinary vision, shaping dining experiences that feel both distinctive and purposeful.
