With over 30 years of culinary excellence across some of the world’s most prestigious hotels, Mario brings a wealth of experience in leading award-winning kitchens, pioneering sustainable practices, and mentoring the next generation of culinary talent. Mario has crafted innovative dining experiences, overseen grand banquets, and collaborated with esteemed institutions. His career highlights include working with Royal households and delivering state banquets at Windsor Castle and Buckingham Palace.

At Jumeirah Carlton Tower, Mario will lead our culinary operations, elevating every guest journey with his creativity, passion for seasonality, and dedication to exceptional hospitality.
